Halloumi And Roasted Red Pepper Bruschetta

Recently I went for dinner with some very dear girlfriends, we went to a tapas style cafe that was tucked away off the beaten track.

Amongst the many delicious morsels we tasted was a halloumi and red pepper dish. I tried my own version of it recently and although not the same it was really yummy. My version has chilli,red onion and mint. Hope you enjoy it as much as we did😊

Halloumi and Roasted Red Pepper Bruschetta

1 red chilli finely chopped

1 packet of Halloumi, I used Over the Moon Dairy, as it’s a local company and really delicious!

1 red onion, sliced

1 clove garlic finely chopped

6 sliced semi dried tomatoes

3-4 roasted red peppers (I used a jar of ready roasted in oil that I had in pantry)

1 packet of Toscana Bruschetta or slice some French bread or ciabatta rub with garlic

Bunch of finely chopped fresh mint

Salt and pepper

  1. Heat about a tablespoon of olive oil in a frying pan add onion and garlic and cook until onion is soft, add red chilli, sliced sun dried tomatoes and sliced peppers. Cook over med/low heat for about 5mins so all flavours meld together.
  2. Meanwhile if using ready made bruschetta toast in oven as per packet instructions. If making your own rub a cut garlic clove over your sliced bread and toast in oven on 180 for about 10minutes.
  3. Slice halloumi and quickly pan fry until golden on each side.
  4. Pile red pepper mixture onto the bread slices. Put halloumi on top and sprinkle with fresh mint. Serve straight away.
