Finally got around to making a cauliflower pizza base this week. Have seen them around on various pop ups but always thought it was a step to far, however I have recently discovered I’m not really good with white bread type products, makes me feel very bloated. so decided to give it a go. I have to say it was so yummy and so so easy I highly recommend trying the base recipe ,put what you want to on the top but don’t overtop it.
The recipe I used for the base was from Healthy Food Guide NZ.
My topping was
3Tablespoons Tomato paste
1 chicken breast, free range, sliced and marinated in 2teaspoons tandoori paste and juice of 1 lemon.
1 red pepper sliced into strips and 1 red onion sliced
1/2 cup grated mozzarella cheese and some freshly grated Parmesan
Spray a pan with oil, add chicken, pepper and onion. Stir fry until chicken is cooked. Cool a bit and then pop on top of your cooked pizza base, that you have spread tomato paste onto, and sprinkle with cheeses.
Cook at 200 oC until cheese is bubbling and has some colour . Enjoy 😊
