I have neglected my blog for some time now, not sure why other than I just got really busy and couldn’t find time to sit and write it.
I have also not been cooking so much, it’s been to hot to be standing in the kitchen so I have been spending time outside enjoying the glorious summer weather.
My husband gave me a pasta maker for Christmas. We have often talked about making our own fresh pasta so now we can. Decided to try it out Boxing Day when my house was still full of people willing to eat, had lots of fresh basil that was starting to wilt a bit so dinner was fresh pasta with basil pesto YUM 😊
The pasta recipe was extremely easy , a Jamie Oliver one that uses just 4 whole eggs , free range, and 400g flour. Make a well in the flour and add eggs , then with a fork whisk the eggs gradually bringing in all the flour. Turn out onto lightly floured bench and knead until smooth. Pop in fridge about 30mins. Cut into 4 pieces and put through your pasta maker.
Pesto was just a very large bunch of basil, I think around 3-4 cups, into the food processor with 2 large cloves of garlic, 1/4 cup toasted pine nuts about 1/2 cup grated Parmesan, bit of salt and pepper and 1/4 cup good quality olive oil. Whizz all together adding a bit more oil if needed. Stir through cooked warm pasta and serve.
