Rocket and Sundried Tomato Pesto

Decided to clean the pantry this morning , well when I say clean I mean move things around so it looks tidier and check what I have and what I need. What I discovered was I really need to write a list before I shop šŸ˜Š I have an abundance of some things and none of other ingredients I use on a regular basis. So today is pesto day, I had 2 jars of sundried tomatoes in the pantry and one opened in the fridge !

No basil in the garden it’s too cold , but rocket in the fridge and walnuts in the pantry so the following recipe is made from what I had in my kitchen.

I think it’s really good winter store cupboard stand by , great for an intense flavour hit. Am going to use my batch on tonight’s roast chicken.

Rocket and Sundried Tomato Pesto

1 x 360gram jar of semi Sundried tomatoes in oil

2 cloves garlic ,peeled

1 cup rocket leaves

1/4 cup walnuts

1-4 cup Parmesan cheese

Drain oil from tomatoes and put all ingredients , except Parmesan , into a food processor. Blitz until smooth, stir in Parmesan cheese.
