I’ve been craving mac n cheese on these cold nights but I didn’t want the heavyness of it. I have seen Jamie Oliver put cauliflower in his so thought I would give it a go. The result is a lighter version but still lovely and creamy. I have used onion soup and light sour cream making it super easy to whip up after work.
Cauliflower Mac n Cheese
- 1/2 head medium cauliflower
- 1 packet onion soup mix
- 1/2 cup tasty cheese, grated
- 2 cups macaroni pasta
- 500g light sour cream
- 3 slices bacon, cooked until crisp and chopped (optional)
- A little pasta water
- 2/3 cup grated Parmesan
Put a large pot filled with water onto stove top and bring to boil. Add cauliflower and macaroni, cook as directed for al dente pasta. Drain and save 1/2 cup pasta water. Remove cauliflower and put back into the pot then mash it well. Add the cheese, onion soup, bacon and macaroni and mix well, stir in the light sour cream and add some pasta water, so it’s not too gloopy.
Pour into a baking dish and sprinkle on Parmesan. Bake at 180oC until top is golden, then serve sprinkled with parsley and some freshly milled pepper.
