Here is the promised recipe for the Slaw. Its quite different in that it doesn’t have a thick creamy dressing. List of ingredients is long but it only takes 15 mins to make.
- 1/4 green cabbage
- 1/4 red cabbage
- 1 large fresh beetroot
- 1 large carrot
- 4 tablespoons parsley
- 4 tablespoons coriander leaves
- 1/2 red onion,sliced
- 1/2 cup roasted chopped almonds
- 2 tablespoons thread coconut ,lightly toasted if you wish
- 6 tablespoons Olive Oil
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
- 1 clove garlic, crushed
- 1/2 teaspoon ground cumin
- 1 teaspoon honey
- Salt and pepper
Finely slice cabbage, grate carrot and beetroot. Chop parsley and coriander finely and slice red onion into half rounds. Mix all together and add coconut thread.
Mix dressing ingredients together in a jar and shake to combine. Pour over slaw and mix well . Scatter toasted chopped almonds on top and serve .
Note you can add more oil to dressing if you wish but we like the lemony lime taste.
