Tomato Relish and Cheese twirls

Normally I would make these in winter to have with a hearty soup,but as I have plenty of relish from my tomato glut I decided to whip up a few for work colleagues today.

You can add salami or ham if you wish but I think they are just as nice without and certainly disappeared fast.

They are just based on a basic scone recipe, I have included the one I used, but use your favorite one if you wish.

Set Oven to 220C

  • 2 cups plain white flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 25 grams butter
  • 1/2 cup milk
  • 1/4 cup cold water + approx 2 Tablespoons
  • 1 cup grated cheese
  • 1/2 cup tomato relish or chutney

Sift flour, baking powder and salt together, rub in butter with your fingertips.Try to be light handed. Add all of the milk and water and mix together with a knife using a cutting motion. Tip out onto a floured board or bench and roll out to a rectangle approx 35 x 25 cms.

Spread relish all over to cover the top and sprinkle with the grated cheese. Roll up from the long side closest to you, to form a log. Cut into 2 cm slices and place on a baking tray lined with baking paper. Bake in a hot oven for 10-15 minutes until starting to turn golden.
