Almond,Carrot and Cranberry bliss balls

Lately I have been on a snack finding mission. I like to have the fridge full of these for my athlete, they are also good frozen so you can make plenty and freeze what you don’t need for the next week.  These are a wee bit different in that I am using fresh grated carrot, one is enough about medium sized.

  • 3/4 cup roasted almonds
  • 1 cup rolled oats
  • 1/2 c toasted pumpkin seeds
  • 1/2 cup dates
  • 1/2 cup cranberries
  • 1 grated carrot(medium size)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt

Soak dates and cranberries in hot water for 10 minutes. Finely chop or put pumpkin seeds into a food processor and whiz til finely chopped, set aside.

Drain dates and cranberries and put into processor with everything except pumpkin seeds. Process until it clumps together. Roll tablespoons full into balls and dip into pumpkin seeds to cover.

Chill in fridge for 30 mins at least before eating. Overnight is best if you can wait!
