Lemon Chicken 

This is quite a filling dish so I would serve with salad or if you are extra hungry maybe just some fresh new potatoes with a bit of fresh mint.

It’s a lovely, easy to pre prepare, dinner dish and great if you are having a few people over because you can get the chicken ready well ahead of time.

Lemon Chicken


Turn oven on to 180C 

  • 4 chicken breasts, free range
  • 1 -2 lemons, rind and juice 
  • 250g fresh breadcrumbs or Panko if you don’t have fresh
  • 20g grated Parmesan
  • 30g butter melted
  • 50g butter extra
  • 1 clove garlic , chopped
  • Salt and freshly milled pepper
  • 2 Tablespoons fresh parsley

Mix breadcrumbs, lemon rind,  parsley and Parmesan together add salt and pepper. Dip chicken breasts into melted butter and then into crumbs to totally cover , set aside on a plate until you have finished crumbling all the chicken. Cook in oven for 20 minutes depending on size of breasts.

Meanwhile melt second measure of butter in pot on stove add garlic and lemon juice. Cook for about 1-2 minutes.

Once chicken has cooked for 20 minutes pour the buttery garlic lemon mixture over the breasts , I use a spoon for this so I can cover the top evenly. Bake for a further 5 minutes and then remove from oven to rest 5 minutes.
