Last week I trialled all sorts of combinations for a no bake museli slice. It’s been far too hot for baking so I’m looking for new ways to provide the wholesome snack to my athlete. The following recipie was the most enjoyable and so easy to put together. It holds a good shape once cut and stored and doesn’t crumble in your hand.
- 2 1/2 cups untoasted seed and nut Museli
- 1/4 cup pumpkin,sunflower and sesame seeds , combined
- 1/2 cup LSA peanut butter
- 1 tablespoon honey
- 1/2 cup dried dates , soaked for 5 mins if too hard
- 250g packet of dried ready to eat figs, I used the Tasti brand figs
Toast Museli in 180 degree oven for about 10 mins , watch it so it doesn’t burn. Once cooled put in a mixing bowl with seeds and mix together. Process dates and figs until they are mushy and well combined, they might form a soft ball , this is good. Meanwhile melt honey and peanut butter together in a small pot.Tip peanut butter and fig mixture into your muesli mix and combine well making sure your dates and figs are all mixed in.
Line a 26x16cm tin with baking paper and press the mixture into it, make sure you press it in really firmly. Put in fridge for an hour then remove and cut into slices. Can store in fridge quite happily for a week or two if it lasts.
