These are a wonderful little bite of energy and so easy to make ,much tastier than store brought versions too. They keep well in the fridge, if you find they last more than a day ! Handy for lunch boxes, great snack before or after a training session and a tasty morsel to have on hand during a hard day in the garden. You basically throw everything in a food processor and blitz until finely chopped and holding together when you pinch a clump.
Roast 1 cup of blanched peanuts add to a food processor with 2 1/2 cups of dates and 1/2 teaspoon of salt. Blitz until finely chopped and then roll 2 teaspoons of mixture together and put in fridge. You could roll in coconut , before refridgeration if you wish.
