It is a windy rainy day today, perfect time to be in my kitchen,making muesli bars.
Store brought Muesli bars are often full of things I don’t really want , that’s not to say I don’t buy from the store when I am time poor. But good quality store brought bars are not cheap and we do seem to get through them during training season.They are a good quick snack before an early morning training because they don’t lay heavy on your stomach.
These are full of dried fruits,nuts and seeds and use the fruity oat porridge we always seem to have left over from winter.
- 1/2 cup roasted roughly chopped almonds
- 1/2 cup pumpkin seeds and sunflower seeds combined
- 1/2 cup dried cranberries and blueberries
- 1/2 cup chopped dates
- 3 cups Harraways Fruit Harvest porridge oats
- 1/2 cup milk powder
- 125g butter
- 1/2 cup honey
Put nuts,seeds,fruits ,milk powder and porridge oats into a large mixing bowl. Melt together butter and honey in the microwave or in a pot on stove top. When melted stir to combine and add to dry ingredients mix well. Press into a baking tin (Swiss roll tin is perfect ) . I line mine with baking paper but you could just lightly grease tin . Bake for 15-20 mins or until lightly browned.Cool in tin, cut into squares.
