Its always about 4 pm that I feel the most in need of a snack to get through the rest of the day. I am looking for something not to heavy and not to sweet. These muffins are just the right mix of fruit, vegetable and nut goodness. They are an ideal morning or afternoon pick me up.
Apple, Carrot and Blueberry Muffins
- 1/2 cup vegetable oil
- 2 eggs, free range
- 1/4 cup raw sugar
- 1 large apple peeled and sliced into small cubes
- 2 grated carrots, about 2 cups
- 1 teaspoon vanilla
- 1/4 cup pumpkin seeds
- 1/4 cup chopped dried blueberries, you could use cranberries or raisins
- 1/2 teaspoon cinnamon
- 1 cup oat bran flour
- 1 cup self raising flour white or wholemeal
- 1 teaspoon baking soda
Put oven on to 180C (350) and line a 12 hole muffin tin with patty cases or baking paper.
Put oil and eggs into a mixing bowl and whisk together, add sugar and vanilla and whisk again. Then add apple,carrots,pumpkin seeds, blueberries and stir to combine. Sift flours together with cinnamon and baking soda and add to fruit mixture . Stir to just combine don’t over mix.
Fill 12 muffin cups and bake for 15-20 mins.
